Sweet Potato Pancakes / 蕃薯餅/ Fan Shoo Beng

~ Sweet potatoes
~ Glutinous rice flour
~ Spring onion (optional)
~ Brown sugar to taste (one tablespoon)
~ Salt to taste
~ Oil

Peel, dice and boil the sweet potatoes for 10 minutes or until soft.

Mash the sweet potatoes up and mix in the brown sugar.

Scoop the mash into a clean bowl.

Stir fry some diced spring onions. Mix the spring onions in with the mash.

Fold in the glutinous rice flour to the mixture (a small amount at a time) until a dough texture is achieved. This part of the process can take quite a long time.

Make into balls and fry in pan with a tiny bit of salt and oil.

Chinese Watercress Soup / 西洋菜湯

~ Mature watercress (two bags will serve two people)
~ Lam Buk Hung
~ Mut Jo
~ Spare ribs or pork chops
~ Slices of ginger


Place all ingredients into a saucepan and add water.

Bring to the boil.

Simmer for 2/3 hours.

Add salt to taste before drinking.

This naturally terminated stone is about 15mm x 8mm and the ring is a US size 4.25. The ring has a durable sterling silver rectangular band and the stone is securely bezel set with an open back.




~ July 2009:  a Faceted Oval Mystic Topaz and Sterling Silver Ring with Vine Motif. Handcrafted in sterling silver and contains a faceted mystic topaz from Brazil that displays a beautiful multicolour iridescent colouration. The stone measures 9mm x 7mm. The ring is a US size 4.25 and has a sterling silver split shank band with an elegant vine design on either side of the setting, and the stone is securely bezel set.

Strawberry Milk Jelly

~ One packet of Hartley's strawberry jelly
~ Recently boiled water
~ Milk

Follow the instructions on the packet of jelly but replace the cold water with cold milk. Remember to let the hot water and jelly mixture cool down first for 30 minutes before adding the milk to avoid curdling.

Pour mixture into desired bowls/containers.

Refrigerate overnight.



Vermicelli Salad

Cook, rinse and strain 16oz of vermicelli. Meanwhile prepare marinade of three tablespoons of lemon juice; four tablespoons of olive oil and two tablespoons of season-all.

Mix marinade and toss cooked vermicelli in it while still warm. Leave overnight if possible.

Next day, prepare two cups of diced celery; one cup of chopped black olives and one & a half cup of mayonnaise.

Mix together and then mix into the vermicelli mixture - use your hands.

Cover with clingfilm and put in the fridge until ready to serve.

Chick Pea Pudding / 馬豆糕 / Ma Dou Go

~ Can of chick peas (drain, rinse and de-skin)
~ Tin of coconut milk
~ Packet of cream of coconut
~ 2/3 of custard powder
~ 10 grams agar agar (quarter of a packet)
~ 125 grams sugar
~ Full fat milk

Soak the agar agar in cold water first.

Boil two cups of water and add the agar agar until it has dissolved. Then add the sugar.

Add the cream of coconut and the coconut milk - mix until dissolved.

Squish chick peas on a plate.

Add the squished chick peas to the boiling mixture.

In a separate pot, add half a pint of full fat milk.

Add custard powder onto the chick pea plate  (separate from pot).

Mix the custard powder and milk then add to pot. This turns it yellow.

Pour mixture into a shallow dish. Wait for it to cool down.

Then add the chick pea mixture. Let it cool down and put in the fridge.
