~ Duck heart tartare mixed with oysters.
~ Cauliflower roasted like a steak with shavings of foie gras and cheddar cheese.
~ Bao with mapo tofu and foie gras.
~ Micro octopus on Himalayan salt.
~ Melon cantaloupe salad.
~ Green wedge salad.
~ Classic meat pie consisting of calf brain, sweetbread and foie gras.
~ Pigs end with tripe stew.
~ Maple pie
